Thịt lợn gác bếp là sản phẩm dùng sẵn rất tiện lợi. Khi sản phẩm được bảo quản ở tủ đá mang ra dùng:
Bước 1: Cho sản phẩm vào lò vi sóng ở chế độ rã đông khoảng 2 phút, hấp cách thủy hoặc cũng có thể rã đông tự nhiên trước khi sử dụng
Bước 2: Xé thịt lợn ra đĩa, Lấy chẩm hoặc tương ớt ra đĩa. Sau đó bật beer, rượu ngoại hoặc rượu vang đỏ sau đó thưởng thức.
Chú ý: Nếu miếng thịt lợn gác bếp trong túi hút chân không không sử dụng hết thì gói kín và để vào ngăn đông để tiếp tục bảo quản.

Cách làm thịt lợn gác bếp của người Tây Bắc
Bước 1: (Chuẩn bị thịt) Những chú lợn được chọn để lấy thịt là những chú lợn ngon nhất, được thả trong rừng, thơm mềm và chắc thịt. Sau khi thịt lợn, người ta chọn lấy phần thịt ở mông, thăn và đùi lợn, đem rửa sạch, để ráo nước. Thịt lợn khi gác bếp thường hao hơn so với thịt trâu và thịt bò, nên khi thái miếng thịt lợn cũng thường to hơn miếng thịt trâu, bò để làm khô. Thông thường, người ta sẽ thái thịt lợn thành từng miếng vuông vắn dài khoảng 20-25cm, rộng 9-10cm, dày 4-5cm rồi tẩm ướp.
Bước 2: (Tẩm ướp) Gia vị để làm thịt lợn khô bao gồm muối, ớt, gừng, tỏi, mắc khén, hạt dổi (nếu có) và vài loại lá rừng tùy theo người làm lựa chọn. Tất cả những loại gia vị này đem giã nhuyễn với nhau làm hỗn hợp tẩm ướp thịt lợn.Đem trộn đều thịt lợn đã thái miếng với gia vị sao cho hỗn hợp gia vị phủ lên toàn bộ phần thịt lợn. Để hương vị thịt lợn đúng chuẩn, người ta không đem đi sấy ngay mà phải để khoảng 2-3 tiếng cho gia vị ngấm đều vào từng thớ thịt.
Bước 3: (Sấy Khô) Sau đó, thịt lợn được xiên vào từng thanh nứa đã vót sẵn rồi đem treo lên gác bếp Đốt than củi ở dưới phần thịt đã gác. Đốt củi với lửa đều từ 5 – 7 giờ liên tục để thịt được làm chín bởi sức nóng của lửa và khói bếp. Sau thời gian trên, bạn có thể kiểm tra độ chín của thịt bằng cách xé thử một miếng nhỏ. Nếu thấy miếng thịt đanh lại, dễ xé và không còn ướt bên trong nữa là được.
Những sai lầm thường gặp khi bảo quản thịt gác bếp
Để thịt gác bếp ở nhiệt độ phòng: Thịt gác bếp bảo quản ở nhiệt độ thường, có thể để trong 3-4 ngày. Sau đó sẽ có hiện tượng mốc trắng. Chỉ có thể bảo quản thịt trâu gác bếp ở nhiệt độ thường nếu để trên giàn bếp.
